JOHNNA’S KITCHEN: PERFECT HARD-BOILED EGGS

Easter is right around the corner! Whether your dyeing eggs or eating them, try out this recipe from Johnna’s Kitchen:

Perfect Hard-Boiled Eggs

Directions:

Put the unshelled Eggs in a saucepan and cover with water if you use Eggs right out of the Refrigerator. Add a tablespoon of salt and a few drops of vinegar to the water. This will help keep the eggs from cracking. Place the pan over medium heat and bring to a boil. Then turn the heat down until the water is just simmering and cook the eggs for 15 minutes.

When cooked, put the pan under faucet and run cold water over until it is full of cold water. This will stop the eggs from cooking.

To shell hard boiled eggs, tap the egg against a hard surface. Roll in between your hands then peel off the shell.

Test eggs for freshness by placing them in a bowl of cold salted water. Discard any that float to the surface or turn their broad ends up. If they do, they are stale.
