1 can crushed tomatoes
4 tablespoons Italian Cheese
2 tablespoons corn oil
First, slice the eggplants longwise and sauté in oil. Next, in a casserole dish, layer the eggplant, tomatoes, and cheese. Add salt and pepper to taste. Then top with Italian cheese. Bake at 325 degrees for 30 minutes and serve hot. Enjoy!
